INGREDIENTS :
Chicken Marinade
 400 g chicken thigh fillets, diced
 5 g garlic, finely diced
 1 tbsp lemon juice
 2 tbsp olive oil
 ½ tsp chipotle powder
Breading
 ¾ cup pepita seeds (Green Pumpkin Seeds)
 1 tsp white pepper
 1 tsp salt flakes
 ½ lemon zest
 ½ lime zest
Shaker Spice Mix
 1 tsp onion powder
 1 tsp garlic powder
 1 tsp kashmiri chili powder
 1 tsp salt flakes
Salad
 ¼ cup savoy cabbage, shredded
 ¼ cup coriander leaves
 ½ avocado, sliced
 8 cherry tomatoes, halved
 2 tbsp mayonnaise

PREPARATIONS :

Marinade Chicken
- Combine the chicken and all marinade ingredients in a large bowl. Leave to marinate for 60 Minutes

- Pre-heat the oven to 200 °C. Line a baking tray with paper.

COOKING METHODS :

- Add the pepita seeds into mixing jar to blend.
Settings: Timer: 6 Seconds / Speed: 9

- Add the zest, pepper, and salt into mixing jar to mix.
Settings: Timer: 5 Seconds / Speed: 5

- Transfer the breading crumb in a large bowl. Toss and coat chicken in the breading.

- Transfer the chicken to the prepared tray. Bake 20-25 minutes until crispy.

Shaker Spice Mix
- Combine shaker ingredients in a small bowl.

Salad
- Combine the salad ingredients in a bowl.

- Serve the cooked chicken over the salad.
- Sprinkle shaker salt over the chicken and top with mayonnaise.
