Thai Prawns Glass Noodles

INGREDIENTS
 80 g glass noodles
 6 large shrimp, head on, shell-on
Sauce
 2 tbsp soy sauce
 2 tbsp oyster sauce
 1 tsp dark soy sauce
 2 tsp sugar
 1 tsp toasted sesame oil
 120 ml chicken stock or water
Herbs Mixture
 ½ tsp black peppercorns powder
 ½ tsp white peppercorns powder
 6 cloves garlic, smashed
 8 cilantro stems, cut 1cm
 15 slices ginger, smashed
 2 tbsp vegetable oil
Garnish
 1 green onion, sliced on a bias

Prawns and glass noodles or Goong ob woon sen is a classic Thai seafood dish.

Preparations
- Devein the shrimps, using pointy scissors cut the back of the shrimp shell open all the way to the tail and remove the vein, cut the eyes part and leg.
- Soak glass noodles for 10 minutes to soften. Drain.
- Mix all sauce ingredients together and stir until the sugar is dissolved.

- Place the noodles and shrimp in the wide bowl and pour the sauce over top. Toss the noodles and the shrimp in the sauce.
- Set-asides.

- Place the oil, peppercorns powder, smashed garlics, smashed gingers and cilantro stems in the mixing jar to sauté until fragrant.
Settings: Timer: 5 Minutes / Speed: 1 / Temperature: 120°C

Notes: You can use Tuya apps preset mode , select SIMPLE CHEF then sautés

- Add the noodles to the mixing jar with all the sauce and place the shrimp on top. Let it boil.
Timer: 3 Minutes / Speed: 0 / Temperature: 100°C

- Stir and sautes the noodles to redistribute the sauce.
Settings: Timer: 3 Minutes / Speed: 1 / Temperature: 100°C

- Transfer to a serving bowl or clay pot bowl. Garnish with spring onion.
