INGREDIENTS :
Dates Pudding
 200 g dates, removed seeds
 8 dates (put inside the bottom of the moulds)
 250 ml boiling water
 1 tsp baking soda
 60 g soft brown sugar
 60 g unsalted butter in small pieces
 150 g plain flour
 2 tsp baking powder
 2 large eggs
 1 tsp vanilla extract
Caramel Sauce
 150 g soft brown sugar
 100 g unsalted butter
 250 g heavy cream
 1 tsp vanilla extract
 1 tsp salt
COOKING METHODS:

Caramel Sauce
- Place the brown sugar, butter, heavy cream, bourbon, vanilla bean paste and salt in the mixing jar then cook.
Settings: Timer: 7 Minutes / Speed: 3 / Temperature: 80°C

- Transfer to a bowl. Set-asides.

Pudding:
- Place dates in the mixing jar, sprinkle over baking soda. Pour over boiling water.
- Add the sugar and butter then chop.
Settings: Timer: 10 Seconds / Speed: 6

- Scrape down sides with spatula.

- Add flour, baking powder, eggs and vanilla bean paste then mix and repeat.
Settings: Timer: 10 Seconds / Speed: 4

Settings: Timer: 5 Seconds / Speed: 4

- Grease 8 pudding molds with butter and place 1 date in the bottom of each. Pour 2/3 batter into pudding molds.

Notes:

Pudding mold 5 x 8 cm

- Place 500 ml water in the mixing jar, place the pudding molds into the steamer.
- Select preset mode R- “STEAM “ Auto Settings Timer : 25 Minutes / Temperature: 120°C

- Turn pudding molds upside down on serving plate. Serve warm with remaining warm sauce and ice cream or cream.
