Irish Beef Guiness Stew

INGREDIENTS
(A) MARINADE AND STIR-FRY
 1.25 kg beef chuck, boneless
 ¾ tsp each salt & black pepper
 2 tbsp olive oil
(B)
 2 tbsp olive oil
 3 garlic cloves, minced
 2 onions, chopped
 180 g bacon, speck, diced
 3 carrots, peeled and cut into 2cm
 2 large celery stalks, cut into 2cm
 3 tbsp all-purpose-flour * option for thicker sauce
(C)
 440 ml Guinness Beer (Note 1)
 4 tbsp tomato paste
 750 ml chicken stock/broth
 2 bay leaves
 3 sprigs thyme
COOKING METHODS:

(A)
- Marinade the beef chucks with salt and pepper for 5 minutes. Set-asides.

- Place in oil and place in beef in the mixing jar and sautes until brown and transfer onto a plate.
Settings: Timer: 20 Minutes / Speed: 2 / Temperature: 120°C / Heat Power: 6

(B)
- Add oil, garlic, onion and bacon in the mixing jar and sautes. Then gradually add carrots, celery and flour.
Settings: Timer: 5 Minutes / Speed: 1 / Temperature: 120°C / Heat Power: 10

Notes: You can use Tuya apps preset mode , select SIMPLE CHEF then sautés

(C)
- Add Guinness beer, tomato paste, chicken stock, 2 bay leaves and thyme in the mixing jar. Then stew.
- This should be beef falls apart at a touch, the sauce has reduced and thickened slightly.
Settings: Timer: 2 Hours / Speed: 0 / Temperature: 90-95°C

Notes: You can use Tuya apps preset mode , select SIMPLE CHEF then stew

- Skim off flat on surface, if desired. Adjust salt and pepper to taste. Remove bay leaves and thyme.

Serve with creamy mashed potatoes or white rice.

Note 1:
- Guinness Beer is a dark coloured rich Irish beer and it is the key flavouring for the sauce of this stew. You CANNOT taste it in the finished dish, it just melds into an amazing sauce.
