INGREDIENTS :
Loaf Pan : 9 x 5 inch (23 x 13cm) 8 rolls
 264 g All-purpose-flour
 171 ml warm milk
 2 large eggs
 50 g sugar
 ½ tsp salt
 80 g unsalted butter, softened
 2 tsp active-dry yeast
 ¼ tsp cinnamon
 1 pinch ground nutmeg
 1 pinch ground Allspice
 150 g mixed dried fruits (chopped cranberry, berries, raisins)
 50 g hazelnuts, chopped
 2 tbsp orange zest
For The Cross
 2 tbsp all-purpose-flour
 2 tbsp cold fresh milk
For The Glaze
 30 g apricot jam
 ½ tbsp honey
 1 tsp vanilla extract
COOKING METHODS :

- After weighing all the ingredients,

Select preset mode R - KNEAD and run the auto setting : Timer: 3 Minutes / Speed: 3 then continue Timer: 7 Minutes / Speed: 2
or
- You may use manual setting for quick kneading.
Settings: Timer: 3 Minutes / Speed: 3 / Temperature: 37°C

Notes:
- If the dough is sticky that it sticks to your fingertips, you need to add a little flour 1 – 2 tablespoon of flour and knead for 1 Minute.

1st Rise
- After the 1st rise, on a lightly floured surface flatten the dough and sprinkle dried fruits, hazelnuts and orange zest. Fold and knead the topping into the dough until well combined.

- Cover the dough with plastic wrap and allow rise for 1 hour.

Punch, Shape the dough and 2nd Rise
- Punch and Divide the dough into 8 equal portions and shape each into longer round. Arrange them side-by-side in a greased loaf pan. Cover the dough and let rise for 1 hour. Brush with egg wash.

To make the crosses:
- In a small bowl, mix the flour and milk until smooth. Transfer the flour paste to a piping bag and pipe a cross on top of each dough ball.

- Preheat oven 180°C for 25-30 minutes until golden brown. If the rolls are getting too brown at the 20-minute mark then cover with aluminum foil and continue to bake. Brush the warm apricot glaze over the warm buns and serve warm.
