- Melt the butter in the frying pan, microwave or oven until completely dissolved and cold. Transfer to the mixing jar.
- Add in the rest of all the ingredients.

- Set the batter aside and allow to rest 5 minutes while heating up your pan or griddle.
- Heat a small knob of butter and 1 tsp of oil in a large, non-stick frying pan over a medium heat until the butter looks frothy.
- Pour in ¼ measuring cup of batter onto the pan and spread gently in round.
Make sure you don’t put the pancakes too close together as they will spread during cooking.
- Cook the pancakes on one side for about 1-2 mins or until lots of tiny bubbles start to appear and pop on the surface. Gently flip and allow it to cook for 1-2 minutes until golden brown. Repeat the same for the remaining batter.
- Serve your pancakes stacked up on a plate with a drizzle of maple syrup and any of your favourite toppings. If you wish to freeze pancakes, then lay them in single layer on a tray or baking sheet and freeze for 30-45 minutes.
