Basic Sambal Tumis

INGREDIENTS :
Spice Paste
 200 g shallots, peeled
 80 g dried chili, deseeded and soaked
 2 big red chilli
 8 cloves of garlic, peeled
 20 g sugar
 2 tsp salt
 5 candlenuts (buah keras)
Lots of oil
 80 g cooking oil , blend with spice ingredients
 80 g cooking oil, 1st saute
 100 g cooking oil, 2nd sauté
<i> *More oil may be necessary if the sambal is too dry </i>
COOKING METHODS :

- Add all spice paste ingredients and oil into the mixing jar to blend.
Press TURBO 3 Seconds
Notes: If you like fine texture, select preset mode R- “SMOOTHIE “ and PAUSE at 10 seconds.

- Scape down jar's side. Add cooking oil into the mixing jar for 1st sautéing.
Settings: Timer: 5 Minutes / Speed: 1 / Temperature: 100°C

- Scrape the bottom of the mixing jar and add remaining cooking oil for 2nd sautéing.
Settings: Timer: 15 Minutes / Speed: 1 / Temperature: 120°C

Notes: Adding oil if the sambal looks too dry. It is ready when the oil breaks.

- Allow to cool, then transfer to a jar for storage.

Tips: If the jar base is burn, use baking powder and cooking oil to clean. Settings: Timer: 5 Minutes / Speed: 4 / Temperature : 70°C. Do not scratch and damage the jar base.
