Eggplant with Anchovies

INGREDIENTS :
To Fry
 3 tbsp oil
 400 g eggplant, cut to 1-2 inch cubes
(A)
 ½ onion, chop into small pieces
 80 g slated anchovies, cut into dice
 1 tbsp soy sauce
 50 g chives, cut in 1/2 inch lengths
Garnish
 2 tbsp fried shallots
COOKING METHODS :

- Add in oil and eggplant into mixing jar to saute until until well cooked and lightly browned.
Settings: Timer: 5 Minutes / Speed: 1 / Temperature: 120°C

- Set-asides.

- Add onion and anchovies to cook until onion is tender and anchovies are slightly caramelized.
Settings: Timer: 3 Minutes / Speed: 1 / Temperature: 120°C

- Add reserved eggplant and soy sauce, continue to cook.
Settings: Timer: 3 Minutes / Speed: 1 / Temperature: 120°C

- Stir in chives for 30 Seconds

- Transfer into serving plate, add fried shallots and serve.
