Chicken Jerky (Bakkwa)

INGREDIENTS:
 300 g chicken breast, removed skin, cut into cubes
 200 g chicken drumstick, removed skin, cut into cubes
 100 g raw sugar
 1 tbsp light soy sauce
 1 tbsp oyster sauce
 ½ tsp rock salt
 45 g honey
 2 tsp fish sauce
 2 tsp chinese shao Xing Wine
 1 pinch ground black pepper
Glazing
 1 tbsp honey
 1 tbsp cooking oil

- Separate the meat into 2 portions to mince twice.
- Press TURBO for 2 seconds (4 times) for each portion

- Add sugar, light soy sauce, oyster sauce, salt, honey, fish sauce, rice wine and ground black pepper to mix.
- Settings: Timer: 3 Minutes / Speed: 1
- Set-asides

- Cover and marinate for at least 8 hours or overnight in the fridge

- Pre-heat oven at 180°C.

- Line a piece of parchment paper on the baking tray.
- Scoop out the mixture and use a spoon to spread a thin layer on the baking tray.
- Roll the marinated meat out on the pan with small rolling pin to cover the entire surface of the pan and to about 2 mm thickness
- Brush some oil on the surface (optional)

- Bake in the preheated oven at 180°C for 20 minutes
- Then gently flip to the other side and bake for another 15 minutes

- cut the meat into squares 6 cm x 6 cm using a pizza cutter.

- Adjust the oven temperature to 230°C (grill if available)
- Brush the jerky with honey mixture
- Bake for 2 minutes or until you are happy with the color.

- Flip meat slices , brush with honey mixture again and grill for another 1 minutes. You may use oven or gill.

Notes: Please DO NOT walk away during this process or you will char the meat badly.

- Cool completely on baking paper.
- Transfer into a container for storage in refrigerator.

Tips:

- If you see some white spots appearing on your bak kwa, under normal circumstances, that’s not because of mold or fungi, it’s usually because the sugar hasn’t been caramelized enough during the cooking process.

- You can wrap them with aluminum foil and reheat in the oven or toaster oven at 180°C for 5 minutes. You can use the microwave to reheat for about 30 seconds or so.

- You may replace with chicken meat
