Orange Yogurt Cupcake

Ingredients

INGREDIENTS:
2 large eggs
120 g softened butter
120 g sugar
220 g low protein flour (cake flour)
1 tsp baking powder
½ tsp salt
140 g plain yogurt
10 g orange zest

Directions

COOKING METHODS:

– Line 10 cupcake cups. Preheat oven 180°C / 350°F

– Place orange skin and sugar into the mixing jar, close the lid
– Then press Turbo 5 Seconds

– Add softened butter into the mixing jar to mix.
Settings: Timer: 30 seconds / Speed 4

– Settings: Timer: 30 seconds / Speed: 3
– Add in egg one by one through the lid cover hole to combine

– Add yogurt into the mixing jar to combine.
Settings: Timer: 30 seconds / Speed: 4

– Add flour, baking powder and salt (all sifted) to mix.
Settings: Timer: 30 seconds / Speed: 3
– Scrape down jar’s side. Continue to mix.
Settings: Timer: 20 seconds / Speed: 3

– Pour the mixture into prepared cupcake cups.
– Bake for 25 minutes at 180°C / 350°F until the topping is golden brown.
– Cool on the wire rack for 15 minutes.

Tips for Topping
Before bake:
– Spoon on toasted sliced almonds
– Sprinkle with brown sugar

After bake:
– small dice of orange
