Black Bean Sauce Chicken

INGREDIENTS :
Marinade Chicken
 4 chicken drumsticks, boneless
 1 tbsp cornstarch (for rinsing)
 1 tbsp dried fermented black bean
 1 tsp ginger
 4 cloves garlic, chopped
 1 tbsp Red chili, chopped
Seasoning
 ½ tsp salt
 1 tsp sugar
 ½ tbsp light soy sauce
 1 tsp sesame oil
 1 tbsp oyster sauce
 ½ tbsp Shaoxing wine (omit for halal)
 2 tbsp cornstarch (for marinade)
 ½ tbsp vegetable oil
Garnish
 1 stalks spring onion
PREPARATIONS :

- Cut the chicken drumsticks into small pieces and add cornstarch mix it. Gently massage and moving the chicken around the bowl when rinsing the chicken with running tap water. Squeeze the chicken meat and dry with paper towel.

Marinade Chicken
- Add the seasoning ingredients in the chicken and mix well then set-asides for 30 minutes.

- Soak fermented black beans in cold water for 2-3 minutes.

COOKING METHODS :

- Place the ginger, fermented black beans and marinated chicken in the mixing jar to saute.
Settings: Timer: 10 Minutes / Speed: 1 / Temperature: 120°C

- Transfer the chicken to a plate and scatter red chili and garlic. Place in the large steamer. Fill up 500ml water in the mixing jar, close the lid and place the steamer on the lid.
- Select preset mode R- “STEAM “ Auto Settings Timer : 20 Minutes / Temperature: 120°C

- Garnish with spring onion. Serve with steamed rice.
