Claypot Mushroom Chicken Rice

INGREDIENTS :
(A) Marinade Chicken
 230 g chicken thighs, cut 3 cm
 1 tbsp light soy sauce
 1 tbsp oyster sauce
 1 ½ tsp dark soy sauce
 ½ tsp sugar
 Pepper to taste
(B)
 3 cloves garlic , peeled
 20 g ginger, peeled
 20 g sesame oil
 5 dried Chinese mushrooms , soaked thinly sliced
(C)
 300 g Basmati rice or white rice , washed
 400 ml water , included the soaked mushroom water
Garnish
 1 spring onions , finely chopped
PREPARATIONS :

- Soak mushrooms in a bowl with boiled water for 20 minutes then cut into slices
- Wash chicken with corn starch flour and rinse with running tap water. Then marinate for 30 minutes.
- Wash the rice and strain.

COOKING METHODS :

- Place garlic and ginger into mixing jar, then chop.
Settings: Press TURBO 3 Seconds

- Scrape down sides, add in sesame oil to saute until aromatic.
Settings: Timer: 3 Minutes / Speed: 2 / Temperature : 120°C

- Add in mushrooms and marinated chicken then cook.
Settings: Timer: 5 Minutes / Speed: 1 / Temperature : 120°C

- Add in rice, soaked mushroom water and water into mixing jar, close jar lid then cook.
Settings: Timer: 30 Minutes / Speed: 1 / Temperature : 120°C

6

- Garnish with some chopped spring onions and serve.
