- Pull back the apron of each crab, remove top shell, then intestines and feathery gills. Rinse quickly. Cut into quartered and crack the legs gently.
- Mix the ingredients (B) seasoning sauce in a small bowl. Set-asides.
- Add the oil and reserved crabs, then sautés until the shell is bright orange.
Settings: Timer: 5 Minutes / Speed: 2 / Temperature : 120°C
- Transfer the crabs to a large bowl.
- Add the ingredients (B) butter, ginger, garlic, chili, black and white peppers and coriander to the the mixing jar continue to sauté.
Settings: Timer: 1 Minutes / Speed: 2 / Temperature : 120°C
- Add the ingredients (C) seasoning sauce mixture and sautes.
Settings: Timer: 2 Minutes / Speed: 2 / Temperature : 120°C
- Return the crabs to the mixing jar and toss to coat in the sauce.
Settings: Timer: 2 Minutes / Speed: 1-2 / Temperature : 120°C
- Garnish with spring onions and serve.
